Along the way, he trained under legends like Roy Yamaguchi, Pablo Mellin, Karl Staub, and Bert Cutino, shaping a cooking style that blends California coastal vibes, global inspiration, and classic culinary technique. His resume reads like a tour of iconic Central Coast kitchens: Sanderlings at Seascape Beach Resort, Roy's at Pebble Beach Resorts, Esteban in downtown Monterey, and the Sardine Factory. At Esteban, his commitment to local sourcing and relationships with regional farmers helped solidify the restaurant as a community standout. Today, as Executive Chef of Grasing's Restaurant in Carmel-by-the-Sea, Mario continues to champion the ingredients and producers of Monterey Bay and the surrounding farmland. His menus spotlight pristine seafood, vibrant seasonal produce, and thoughtful partnerships with growers, ranchers, and artisans always honoring the flavors he grew up with, but layered with the polish of a chef who knows exactly where he came from.
