Chef Diego Oka, one of South Florida's leading chefs, is celebrated as a pioneer of Latin American cuisine in the U.S. With over 20 years of culinary experience, Oka has led La Mar by Gastón Acurio at the Mandarin Oriental, Miami, since 2014. Under his guidance, the restaurant has gained significant acclaim, including a Florida Michelin Guide recommendation and a place on the 50 Best Discovery list. Born in Lima, Peru, and of Peruvian-Japanese heritage, Oka's culinary style is both inventive and nostalgic, influenced by his childhood memories cooking with his grandmother and his extensive travels. Each of his dishes reflects this blend of tradition and modern technique, honoring the rich diversity of Peruvian cuisine. In addition to his role at La Mar, Oka is known for mentoring emerging chefs and promoting Latin American culinary talent by hosting guest chefs from across the region. He also represents Miami and Peruvian cuisine at international events such as Madrid Fusion and San Sebastian Gastronomika, bringing greater visibility to Latin American culinary traditions. Oka's career began with an internship in 2001 at the world-renowned Astrid & Gastón in Lima. By 2005, he was executive chef at the original La Mar in Lima, and later held leadership roles at La Mar locations in Bogotá, San Francisco, and Mexico City, refining his craft with each post. In Miami, Oka has introduced AMANO by Oka, an eight-course tasting experience served on handcrafted ceramics he created himself, merging his love for food and pottery. AMANO's intimate setting provides a unique journey through Peruvian cuisine, showcasing Oka's commitment to artful, culturally immersive dining.
