Chef Heena Patel is the Chef and Co-Owner of Besharam, her acclaimed Gujarati restaurant in San Francisco's Dogpatch district that has helped redefine how Indian cuisine is experienced in the United States. A self-taught chef, Heena forged her own path into the industry, channeling heritage, intuition, and lived experience into a cooking style that is fearless, deeply personal, distinctly Californian, and proudly shameless.

Opened in 2018, Besharam takes its name from the Gujarati word for "shameless," a philosophy that gives Heena creative freedom in both attitude and approach. The name reflects the vastness of her cooking: unapologetic in flavor, generous in spirit, and unbound by expectations of what Indian food, or fine dining should be. Through a vegetable-forward lens, her menus spotlight regional Gujarati cuisine, marrying bold spices with seasonal California ingredients in dishes that feel playful, layered, and rooted in real life.

Before imagining a career as a chef, Heena entered the food industry simply to survive, and to one day become an American citizen. Decades later, her journey from working-class kitchens to leading Besharam has come to symbolize both the inequities embedded in the restaurant industry and the more equitable, sustainable future she believes is possible. While critics once insisted that fine-dining, vegetarian Gujarati cuisine was too specific to be profitable, or that she herself was not "professional" enough to succeed - Heena and her staff, supported by the greater Bay Area community, continue to defy convention at every turn. Her work has earned widespread recognition, including being named Eater San Francisco's Restaurant of the Year (2019), along with coverage from The New York Times, The Washington Post, and acknowledgment from the James Beard Foundation.

Beyond the kitchen, Heena serves as a Board Member of La Cocina, the nonprofit culinary incubator where she first launched her career. In this role, she is deeply committed to mentoring and advocating for women, immigrant, and BIPOC entrepreneurs, returning power and resources to the working-class people and families behind the food that sustains the Bay Area's dining culture. From her staff and farmers to fellow La Cocina businesses, Heena believes in entrusting real people with their food, and their futures.

At its best, Heena believes American food is defined by its openness - bold in flavor, expansive in influence, and unafraid to reflect the values of the people who cook it. That belief continues to guide her work at Besharam and with La Cocina, as she pushes for an industry that is more honest, more inclusive, and brave enough to imagine what it does not yet know.
