Born and classically trained in Florence, Italy, Fabio opened his first restaurant at just 19 years old before bringing his craft, and his conviction, to the United States.

Fabio rose to national prominence as a fan favorite on Bravo's Top Chef, but fame was never the goal. Feeding people was. Over the past two decades, he has developed, launched, or partnered in more than 50 restaurant brands across the United States, spanning full-service restaurants, fast-casual concepts, campus dining, hotels, casinos, food halls, and large-scale mixed-use developments.
